Ok, this is a fun recipe because you can mix and match anyone of your favorite fruits or veggies for these muffins. I've made these muffins plenty of times and I can tell you, it's delicious!

My father likes this recipe as is.... i'm a plain Jane, so I omit the raisins, nuts, and coconut so it's basically just a banana/carrot muffin, but just as good!

You can eat this as breakfast (as I do) or a snack. You can toast it and put some cream cheese on it if you decide to make bread instead of muffins. YUMMY!!!!

These muffins my look small, but they definately fill you up, it's a great, quick and easy breakfast option if you have no time to cook in the morning.Submitted by NICKY791
