Cookbook creator says: I make this all the time with chocolate Graham crackers. The crackers soften if you freeze them at least over-night. I think it is better than a "real" ice cream sandwich.

The same as my other pumpkin custard but with eggs whites instead of whole eggs to reduce the fat and cholesterol. We eat this throughout the year - not just for Thanksgiving. It is a great source of vitamin A. Warm or chilled, topped with pecans or whipped topping (add the calories!), it makes a great snack or dessert.

This is a great veggie main, and the lefotver rice makes great faux-meatballs if you use a glutinous rice to begin with. But it's great with any variety of long grain rice, so enjoy! In Egypt, this is also served with elbow macaroni mixed in, but I had it both ways when I was there and I find I prefer it without the pasta (it made it too heavy for my tastes). I've also used the tomato sauce as a pasta sauce before--it's a nice low-cal change of pace!
