Granny's Mock Ice Cream Sandwich

Cookbook creator says: I make this all the time with chocolate Graham crackers. The crackers soften if you freeze them at least over-night. I think it is better than a "real" ice cream sandwich.Submitted by MSCAT3851

Pumpkin Custard made with egg whites
Incredible! 5.0/5

Pumpkin Custard made with egg whites

The same as my other pumpkin custard but with eggs whites instead of whole eggs to reduce the fat and cholesterol. We eat this throughout the year - not just for Thanksgiving. It is a great source of vitamin A. Warm or chilled, topped with pecans or whipped topping (add the calories!), it makes a great snack or dessert.Submitted by 2ABETRLIFE

Kushery (Egyptian-style Lentils and Rice)

This is a great veggie main, and the lefotver rice makes great faux-meatballs if you use a glutinous rice to begin with. But it's great with any variety of long grain rice, so enjoy! In Egypt, this is also served with elbow macaroni mixed in, but I had it both ways when I was there and I find I prefer it without the pasta (it made it too heavy for my tastes). I've also used the tomato sauce as a pasta sauce before--it's a nice low-cal change of pace!Submitted by DAMIENDUCKS
