This is our favorite sausage and Kale soup, if you don't have kale, you can use swiss chard and if you don't have that you can always use spinach. The recipe is quite forgiving so don't worry about measuring incorrectly. Just dump everything in cook it and enjoy!Submitted by NIKKIBEE114

I was a little scared by the idea of kale at first (it sounded like seaweed to me) but it is so buttery and crispy in this recipe, a perfect flavor and texture combo with the eggs.
