My mom was diagnosed with celiac disease about 8 years ago. We have looked everywhere for delicious recipes that substitute other products for gluten. i was fortunate to come upon this wonderful recipe, which uses only 2 unusual ingredients: GF flour and Xanthan Gum. Even though I CAN eat gluten, I still very much enjoy this delicious banana bread. It is best hot from the oven! This is an altered recipe from the Better Homes and Gardens Cookbook. It uses ready-to-bake/no-boil gluten free rice noodle in the place of normal lasagna noodles and it tastes GREAT! We also recommend the sauce used in this recipe to ensure that it remains gluten-free. The use of weight-watchers cheese, 98% fat free ground beef, and egg beaters lowers the fat and calories considerably. My mom made this for years, and I loved it as a kid. It comes out brownish because of the spices, is always super moist, and is DELICIOUS! This version calls for gluten-free flour, but regular flour may easily be substituted. Submitted by AMYMLE Carbs: 22.5g | Fat: 7g | Fiber: 1.5g | Protein: 2.1g | Calories: 158
