This soup is easy to make and freezes well. I usually use two LARGE cans of tomato juice from a discount grocery store and add whatever vegetables that are in season. You can also add some ham/cheese (but watch the amount as this adds calories). Once the vegetables are soft, I let the soup cool and divide it up into lunch size portions and stock my freezer for the next few months!
