This stir fry is vegan / vegetarian, high protein (for a veggie dish), high fiber (over 7g), low fat (3%), low carb (12%), and can be eaten as a meal or a side dish. As a meal, just do 2 servings (about 12 oz... or 350 grams). As a side dish you can serve it with whatever you like. I'm not actually vegan or vegetarian, so I would eat this with baked/broiled chicken, and/or toasted pita bread with the high protein yogurt made by Brown Cow (since it's 23g per cup). The yogurt I make into a dip with some spices mixed in. Also, if you want this stir fry a little more "spicy" you can add a little hot sauce. You can also add this mix to some beef or chicken broth to make it a soup. Submitted by TRUEBLU4YOU Carbs: 19.4g | Fat: 5.4g | Fiber: 7.4g | Protein: 10.4g | Calories: 161.9

Alright, this is a recipe that I got from a Tofu cook book which my mother-in-law gave me. It is really good, I just got done making it! The only thing I did different from the recipe is leave the patties in the oven longer than what was called for. That and grind on some pepper with the gravy, yum! I quit eating "things with feet" to get my MD off my back about cholesterol and blood pressure...and, because I married a pretty little thing 12 years younger than me. I mean, do the math: I'm older, so, statistically speaking, I should take a croak, before her. Well, I don't WANNA. But, foods like sausage are the paving stones of the road to hell, from a dietary standpoint. And, one of my favorite foods. So, here's a VERY viable substitute. You're going to need cheesecloth and stout string; dental floss will do. Submitted by TA24JC Carbs: 15.8g | Fat: 4.2g | Fiber: 2.7g | Protein: 66.9g | Calories: 361.4

Here we go...summertime's a-comin', and there's nothing like a good brat, huh? Except for the fats, chemicals, additives...'bratwurst,' the German word for "down-payment on a coronary disease." These are ALL natural, non-chemically-enhanced, GREAT for those watching fat intake, SUPER for protein sourcing, and animal-friendly. I didn't figure tortillas into the calorie count, so that you can choose whether to use corn, flour, or whole wheat. This is from the book "Lean, Luscious and Meatless," but I used lime juice instead of orange juice, as the authors suggested. Red lentils, in themselves a powerhouse of nutrition, combined with fast-cooking soup pasta, acini de pepe (http://en.wikipedia.org/wiki/Acini_di_pepe) for even more protein, and texture, dresses up with a whole mess o' veggies. A no-brainer to prep, this one cooks in TEN MINUTES, and stands alone, or, you can add your favorite compassionate protein.
