This is my version of the low cal starbucks breakfast wrap that is so good but way too overpriced to eat everyday. It is so yummy and easy to make. I make the filling the night before and bring it to work to assemble

I had a bag of regular shirataki noodles in my fridge left over from a sukiyaki night, and I figured why not use up some EggBeaters too and make a long-lost favourite of mine: pasta omelette! I call it "pastata", but since it's all stovetop it's really not. And it *could* serve two, but I'm a pig :-).

These are a fast and healthy version of my favorite breakfast item. I cook a batch of these on Sunday and then put them in baggies to eat on my way to work. Makes a good mid morning snack too.
