This is our favorite sausage and Kale soup, if you don't have kale, you can use swiss chard and if you don't have that you can always use spinach. The recipe is quite forgiving so don't worry about measuring incorrectly. Just dump everything in cook it and enjoy!

Can use different kind of vegetable other then Kale such as spinach, zucchini, butternut squash, etc. Also can use another type of beans such as northern beans, chickpeas or kidney beans

Cassoulet is typically meat-heavy with some vegetables. This version is vegetable-heavy with some meat. I also made a vegetarian version by replacing the meat with some imitation-meat.
