This is a wonderfully high protein alternative for vegans and vegetarians. It is very versatile as it can be cooked in casseroles and curries or cut into cutlets and BBQ'd or simply sliced thinly as a sandwich filling.

Use gluten-free oats for gluten free bars.

Pure maple syrup can be subbed for the agave nectar if you can't find it, but most grocery stores with a healthy/natural food section should have it. Honey will work well too if you don't care if it's vegan or not.
