i have to have a gluten, wheat and lactose free diet. i'm a picky eater which doesn't help and i don't like the texture of most fruits and veggies! i'm logging the tried and tested recipes as they are made, frozen and reheated to expand my palate!

Cookbook creator says: I usually only go for mushroom flavoured risotto, fancied a change and this was yummy, i used canned ready chopped tomato because i don't actually like the texture of tomatoes but the ready chopped doesn't leave a lot after cooking and i get the tomato taste :)

Cookbook creator says: nicey and garlicy. don't like in north america so i substituted the globs, for what seems to be a similar product of lazy garlic. something that i could have as a lunch. will update how it unfreezes.

Cookbook creator says: i found this a strange mix when i chucked it together, turned out not too bad, it's made it's way in to the "will eat regularly" category. doesn't freeze so definitely best to make it at the time you want it.
