spread some cool whip on bottom of a 9 x 13 pan. Place 1 layer of crackers on top (puffy side up). Prepare pudding as directed, spread 1/2 on top, do same with second pudding. Add another layer of crackers, then half the cool whip, another layer of crackers, remaining pudding, another layer of crackers, remaining cool whip. Refrigerate overnight. This is very easy to make, super tasty, nice and light.
Looks like phyllo pastry when served. you can omit 1 of the puddings and replace with pie filling on the top of dessert if desired.

I baked the pumpkin in advance, you may use canned pumpkin. I don't know if it will change the calories. The crust isn't tightly packed because I wanted to use as little butter as possable. You can leave out the canola oil if you like, I only use it for the healthy fats.

Yummy vegetable soup. This makes a large quantity of soup for several meals and/or freezing.. I like to make this and eat it throughout the week for lunches and snacks. Also, there is always plenty to share with a friend's/neighbor's family.

Based on "Self-Crust Pumpkin Pie" (a great recipe), but used Splenda and Splenda Brown Sugar in place of the regular white and brown sugars. This recipe drops the calories to from 133 to 104 and the carbs from 28 to 21.

And it is delicious.
