Got a call that I was going to have a house full of company in a hour and a half. I found the recipe online, but had to substitute some of the ingredients with what was on hand--I think my version came out better. All of my guest and my kids loved it!

You could substitute Ebb Beaters but I use Better'n Eggs because it's lower in sodium.

Perfect for a meal on the go or a healthy snack. Perfect alternative to a sugary treat. This cookie contains less than a half gram of sugar per serving! To bring the calorie count down replace the brown sugar with splenda brand brown sugar.
