I got this recipe from Nourshing Flourshing! They are fast easy and all good ingredients, can you believe only 3, yes 3 ingredients in these cookies? There really doughy and soft, so make sure you let them sit to harden a bit!

I can't have gluten and my son has hypoglycaemia, so he needs a high protein diet, and can't have sweets. I'm thanful to have this favourite of his, so that when I crave a treat, I can also eat cookies. Without much work, and without feeling guilty!
For variety, you can use cooked dates instead of honey, and add anything you like: puffed or crispy rice cereal, dried fruit, coconut...
