This easy-to-make potato veggie bake can be done with whatever root vegetables you have on hand. Normally I use more zuchinni and squash and less potato, but this is what I had in my kitchen today! You can also add black pepper and other spices to your liking.

No fat, no sugar "ice cream". Really does taste like ice cream! It is quite filling too since whipping it in the food processor adds a lot of air into the ice cream.
One banana is good for 1 or 2 people.
