My neice uses coconut flour so I decided to try the pancakes. They are really good. Gluten free, soy free, low fat and carb, and sugar free. You can combine coconut flour with regular flours as well. This is a quick, easy breakfast when you're in a hurry. I generally use frozen blueberries and thaw them in the microwave before I put them on top. You can use any granola cereal, and the raisins are optional (but I usually add them because I like them and the granola cereal doesn't have very many). This is my go-to breakfast. It can be made entirely in the microwave, from ingredients that don't need to be pre-cooked (a must for me since I'm a student with no access to an oven!) You can substitute pre-packaged egg whites instead of separating them out from the egg if you like, and you can also switch out all of the other ingredients to things more to your taste (for example, I sometimes chop up a mini Babybel light cheese or a light Swiss Laughing Cow cheese in place of the shredded cheese). My mom used to make this delicious version of French toast for breakfast when I was growing up as a great alternative for getting rid of overripe bananas. It makes regular French toast seem bland in comparison! This is excellent topped with a low calorie maple syrup or your favorite yogurt (I like strawberry). **Please note: I usually get my bread from a local bakery, so I did not include the bread in the nutrition values.
