99% of the time I walk into the kitchen hungry, usually followed by the roommate. I got the cooking creativity from my father, the skill from my mother, and combined, I come up with some odd recipes with whatever we HAPPEN to have in the kitchen. This was a winner.

All measures are approximate, as I don't measure exactly, but eyeball measurements.

Prep time is about 10-15 minutes, cooking time is about 15-30 minutes.

Quick and easy breakfast that is tasty, filling, and low carb. It's great for a crowd, too, as it's just as easy to make a dozen as it is to make one. If making more than one, placing ramekins on a sheet pan is helpful.
