My favorite dish at a local Mexican restaurant is their Chicken Enchiladas with Creamy Green Chile Sauce. I had to try and find a way to lower the fat and sodium so I could enjoy these without the guilt! I tweaked that recipe a bit to lower the sodium and fat, and came up with a winner! This is my basic salad dressing recipe, taught to me by a good friend from France. You can change out the oil or vinegar type, add light mayo to make a creamier dressing, use sugar or Splenda instead of honey, add garlic or shallot to give it more of a bite, switch vinegar out for lemon or lime juice, etc. Basic and versatile.
