Flourless Chocolate Cake
Very Good 4.6/5
(5 ratings)

Perfect for chocolate lovers! Great for entertaining, deceptively easy to make. Perfect for people who can't have gluten. Serve warm with ice cream or whipped cream, or simply dusted with icing sugar. I flour the pan using cocoa powder so it won't leave white marks on the cake and keeps it totally gluten free. Not low calorie, but very rich so you could easily half the portion if you pair it with some berries on top. I also know someone who substituted splenda for the sugar and swore she couldn't tell the difference but I have never tried it.

Flaxseed Quick Muffin/Toast (Gluten Free/Low Carb)
Very Good 4.0/5

This is my go-to breakfast recipe. This recipe is gluten free and low carb/sugar. I like to slice the "muffin" horizontally into 4 thin "toasts" and top them with whipped cream cheese or Polaner Sugar Free w/Fiber Preserves.

I wanted to make a treat for my birthday and still keep in bounds. These are made in a mini-muffin tin, so they are about two bites each

This is higher in natural sugars than I what usually eat, but as a treat it still has a lot of healthy ingredients. The chia seeds have a little crunch if you eat it right away. If left for a few hours, they soften I think. Chia are high in protein and a gelatinous food that helps regularity. With the probiotics in the yogurt or kefir, this has good stuff for your digestion. A simple, no-cook recipe.

GF bread that actually tasted pretty good. It's great toasted if you have a wide-slot toaster or toaster oven. It can also be sliced in half for sandwiches.
