I serve kale colcannon as an accompaniment to crockpot corned beef & cabbage on Saint Patrick's Day, as my crockpot never is big enough to hold potatoes too. I was surprised to find no SPRecipe for Kale Colcannon. Usually made with cabbage not kale (except on Halloween), colcannon is healthier if you make it with kale, as kale scores as the #1 most nutritious veggie on the Andi scale. This is my tweaked recipe from Mark Boyer's County Mayo Colcannon recipe in Allrecipes. Submitted by CAROLFAITHWALKR Carbs: 24.8g | Fat: 18.5g | Fiber: 4.3g | Protein: 6.4g | Calories: 276.7

For perfect results try using a V-rack in your roasting pan or roast the turkey on a bed of vegetables. Once the fat from the turkey melts, it falls to the bottom of the roasting pan. When that happens, the bottom quarter of the bird does not roast--it braises in its own juices. The vegetables or V-rack prevents this from happening. My family loves to make this during Thanksgiving, and it buys some time if dinner is taking a little longer than expected. We use a 15 ounce wheel - I could only find a calorie count for 3 smaller ones - but the calories will be very close either way. The recipe converter was not very easy to use for this recipe & I am completely unsure about the nutrtional values... the sodium looks exremely high & I don't know how much the bird absorbs in the brining process. It's the perfect time of year for this recipe! Sweet potatoes are one of the most delicious (and nutritious!) winter comfort foods, and the warm maple syrup flavor of this dish is the perfect complement to cold weather. Choose medium sweet potatoes with firm, unblemished skins — they'll have the best flavor! Submitted by TABBYKAT75 Carbs: 37.8g | Fat: 0.2g | Fiber: 5g | Protein: 3g | Calories: 161.1
