I am a stay at home mom with three children. Two of them and my husband have different food allergies and intolerances. This can make cooking a challenge. Perfect for chocolate lovers! Great for entertaining, deceptively easy to make. Perfect for people who can't have gluten. Serve warm with ice cream or whipped cream, or simply dusted with icing sugar. I flour the pan using cocoa powder so it won't leave white marks on the cake and keeps it totally gluten free. Not low calorie, but very rich so you could easily half the portion if you pair it with some berries on top. I also know someone who substituted splenda for the sugar and swore she couldn't tell the difference but I have never tried it. This is an altered recipe from the Better Homes and Gardens Cookbook. It uses ready-to-bake/no-boil gluten free rice noodle in the place of normal lasagna noodles and it tastes GREAT! We also recommend the sauce used in this recipe to ensure that it remains gluten-free. The use of weight-watchers cheese, 98% fat free ground beef, and egg beaters lowers the fat and calories considerably. Seriously EASY and tasty flour tortillas. Take the time to prepare them, be patient with the food and with yourself, and you'll have really awesome wraps for a sandwich :) Having a cast iron tortilla pan works nicely, as does the ability to roll sticky dough into the thickness of a traditional crepe. My mom was diagnosed with celiac disease about 8 years ago. We have looked everywhere for delicious recipes that substitute other products for gluten. i was fortunate to come upon this wonderful recipe, which uses only 2 unusual ingredients: GF flour and Xanthan Gum.
