Did you know that a single serving of french onopn soup at a restaurant normally has between 800 to 1200 calories and a WHOPPING 60 grams of fat? I was HORRIFIED when i did the math and realized this fact. So here is a pared down version that ups the protein so you feel fuller longer and cuts the fat while still allowing you to have all the gooey yumminess of real french onion soup. This IS rather high in the sodium so I would not recommend for those on heart restricted diets- but of you are watching fat and carbs then this is for YOU!

I was pleasantly surprised by this creamy soup. I wouldn't have made anything with curry if hadn't been made for me first.
Start with a pinch of curry and work your way up until is suits your personal taste.

The nutrition calculator seems a little off on the sodium since there is no added sodium in the soup.

I have loved clam chowder since childhood, but the traditional high fat, cream-based recipe just kills me. Here, with the easy substitution of soy or rice milk for dairy, a traditional classic becomes perfectly safe, not to mention simply delicious. Soups and chowders are also a great way to safely add plenty of insoluble fiber from fresh veggies, so don't skimp on the carrots and celery. Their fiber will be much easier to digest after the long, slow cooking time.

For vegetarians or even vegans, vegetable stock can be used instead of chicken stock. I usually add whatever other root vegetables I have on hand- potatoes, celery root, carrots, turnips, etc, so have fun with it and don't be afraid to experiment. I personally love the earthy and creamy taste of the sunchokes, but if they are not to your liking or you cannot find them in your market, by all means, leave them out. This soup is perfect for holiday dinners, cold days, or anytime when you crave a hearty and rich meal...without all the guilt!

This healthy, creamy, mildly spicy soup can be served as a main course with toasted baguette slices or in small portions as a first course before an elegant dinner.

If you want to make it spicier, add some red chili flakes. For an extra hit of protein, add 50 ml ( 1/4 cup) of red lentils to the chicken stock.

cut the beef into bite sized pieces, removing as much fat as possible. Cover well with water simmer on a low heat until very tender. You need not add a lot of salt to this but some is advisable. while this simmers add six bullion cubes to eight cups of water and bring to a boil. To this broth add one and a half cups of pearl barley, reduce heat and simmer for about 45 minutes. When the beef in the other pan is tender add the mushroom and the onion and continue too simmer gently until they are tender, about 20 minutes. With a slotted spoon and leaving the cooking broth out add the barley to the pot of meat, mushrooms and onions and allow to simmer together until you are ready to serve dinner. A very hearty and filling soup. I feed the remaining broth from the barley to my dogs over their food, they love it and it is good for them too.
