I quit eating "things with feet" to get my MD off my back about cholesterol and blood pressure...and, because I married a pretty little thing 12 years younger than me. I mean, do the math: I'm older, so, statistically speaking, I should take a croak, before her. Well, I don't WANNA. But, foods like sausage are the paving stones of the road to hell, from a dietary standpoint. And, one of my favorite foods. So, here's a VERY viable substitute. You're going to need cheesecloth and stout string; dental floss will do.

This is an exceptional recipe if you're looking for high protein, low fat. This and sauerkraut for your carb makes an awesome mini-meal or snack. Or for a bigger meal you could put it on a whole-wheat bun for your carb and sauerkraut for your veg. Submitted by TEJOLOTE
This is a slight tweaking of a recipe I found on restaurantwidow.com. I tried to minimize the salt to keep the sodium levels in check. It came out delicious! My 5-yr-old couldn't stop eating them, when I made it for the first time yesterday, and she is already begging me to make it again. They are the perfect snack because they are full of nutrients with hardly any calories; they taste delicious, and have a very satisfying crunch.
