This is among my many spanish favorites for its' flavor, simplicity, and minimal ingredients. If you have a pressure cooker handy, it'll cook in less than 20 minutes, give or take depending on desired consistency. It goes perfectly with rice or simply vegetables, if you choose. Either way, it will be one of your favorites also.

This is a lower sodium, low fat, and generally "diet friendly" version of Spanish rice and beans dish. The chicken broth replaces the oil normally used. I stayed at a superbly elegant hacienda adjacent to El Chico Natural Park, from where I obsconded with this dish, before going on to visit the Tula archaeological site, one of ancient Mexico’s most important ceremonial centers. I chose to re-make the Crunchwrap Supreme from Taco Bell because Taco Bell used to be one of my favorite fast food restaurants. Also, it is still my boyfriend's favorite fast food chain and nearly every time he goes there, he will order a crunchwrap supreme.

The funny thing is that most Mexican and Tex-Mex dishes are fairly simple to make... so I knew that it would be fun, delicious, and not too challenging to re-make this item!
