I cook these waffles in batches and freeze them for later. My favourite breakfast is a lightly toasted waffle covered with 4-ounces of low-fat yogurt and a cup of fresh berries. When I want a special treat I toast a waffle, cool it slightly, fold it in half and add a -cup scoop of light ice cream.

Cookbook creator says: As many of the reviews state, these cookies are like cereal bars. I'm trying boiled sweet potatoes instead of pumpkin, half brown sugar and half Stevia, adding 2-tablespoons almond milk and -cup peanut butter. I think I'll throw in a -cup of sunflower seeds too. Flatten the cookies before baking.

Cookbook creator says: Second attempt - I tried this recipe with the addition of -cup of crumbled light feta cheese and left out the almond milk (moist enough). It also worked baked in the oven in a casserole dish or muffin pan until lightly browned (I baked at 375).
