Based on a recipe from a superb low carb cook, I've "Texanized" the original. Have it plain OR garnish with your choice of salsa, sour cream (or Greek yogurt), chopped pickled/fresh jalapeños, chopped tomatoes, sliced/chopped avocados. My husband likes this better than traditional pizza. I make 2 pizzas at once and freeze one for later. The crust can also be used for garlic fingers. Just brush or spray crust with olive oil cooking spray and throw on some minced garlic cloves and mozzarella before baking. Yum!
