Based on a recipe from a superb low carb cook, I've "Texanized" the original. Have it plain OR garnish with your choice of salsa, sour cream (or Greek yogurt), chopped pickled/fresh jalapeƱos, chopped tomatoes, sliced/chopped avocados. The almond flour is really optional, but included in the nutritional statistics. The ricotta cheese blends in so well, you won't know it's there -- but adds some wonderful protein to the stats.

This is a recipe I saw in a local paper that I tweaked a bit to make it lower in fat, cholesterol and sodium. It is absolutely delicious as is, but you may serve it on toasted bread slices if desired.

This baked egg dish is super simple, tasty, and a throwback to classic French cooking. Adding two egg whites to substitute for a whole egg lightens the calories, and lots of fresh herbs plus some parmesan and fat free cream keeps it fresh, but still decadent.
