This is a great dairy free side dish or main course!
The preparation of the lentils is the longest step: they need to sit for 1 hour after boiling. This is an EASY recipe! It freezes wonderfully and the taste improves over time.

I just made this up with the ingredients I had on hand. I think it turned out pretty tasty.
I didn't realize how healthy it was before I entered it in the recipe calculator- 19% of your daily iron, 8g fiber, and 10g protein, all with only 211 calories. Not too shabby.

Step aside, Manwich! You've got nothing on these babies! *I typically use brown sugar instead of regular sugar, and I buy as lean of beef as I can find. My fiance won't eat anyone else's Sloppy Joes after he tried these! Also, these are really large servings, you could easily cut this in half for a smaller portion with fewer calories...
