Cookbook creator says: You can substitute a small pork roast for the pork chops. When I do that, I use an extra tbsp minced onion and a whole bottle of bbq sauce. You can thicken the sauce with corn starch after removing the roast, too.

This is large recipe for batch cooking and freezes great! The recipe is calculated using boneless, skinless chicken thighs; to reduce the fat, use boneless, skinless breasts instead. Low sodium at 114mg per serving.
