We have some excellent salads, but they are too big for just my use..so this is one that is cut down from the Recipe of VALERIEHASH. I also don't usually have fresh parsley on hand..do add it if you have it. (I may have to start keeping it)

This is a great summer salad to bring to a picnic or use for a packable work lunch.

SP didn't let me choose red and green apples. So use one red apple and one green apple. Also I use a red onion for better flavor.
