I used all the "light" or fat free kinds of ingredients I could and it's not the best for a good diet but, for a nice change on occation this is a very tastey dish that my whole family loves. I hope yours will, too!

This recipe is adapted from a Redbook magazine recipe my mother found in the 70s. I've added more vegetables to the original choices. It's a family favorite and very healthy.

Fresh tomatoes are baked with spinach and topped with bread crumbs and Romano cheese for a healthy side dish. I love this summer recipe.
**You can choose not to add as much of the bread crumbs & cheese based on your tastes-you can even use non seasoned bread crumbs or another type of cheese (just be sure to account for the nutritional information changes)!
