In the 2000 census North American Indians and Alaskan Natives number only about 2.5 million.

Native American Indians believe that patience is considered a good quality and that respected members of some Nations are ones who shares and gives their wisdom and wealth to others.

My inspiration in collecting and sharing these recipes is to continue in that tradition of sharing wisdom and wealth.

Pre-mix the dried ingredients in a zip lock bag to carry along on a camping trip to make Apache Indian bread over an open fire.

Acorns taste like a cross between hazelnuts and sunflower seeds and were nearly as important a food to Native Americans as corn, squash and beans.

Cherokee, Apache, Pima, Ojibwa, and most all other Native Americans tribes across the oak growing North and South America routinely harvested and used acorn nuts from oak trees and they taught early settlers how to harvest and use acorns, corn and other traditional foods too.

This recipe comes from Mexico. The first time I ate it no-one told me what I was eating. I ate 3 tostadas before anyone would tell me what it was made of. When they told me I would have never tried it had I known, and I would have missed out on a favorite dish of mine and my grandmas.

It may sound like it's unhealthy and scary, but it really is a safe and healthy. I've been eating it for years and never gotten sick.

Native Americans have had Bannock cooking over a campfire for many many years. It's now becoming popular with campers.

Prepare a favorite bannock recipe, bake in an oven or divide the dough into egg sized lumps and firmly wrap each lump around the end of a four foot stick. Prop the stick securely over the fire until golden brown. Turn the stick to cook the bread evenly.

"Chitlins" or Chitterlings are the small intestine of a hog. My NA Grandfather was a hog farmer and he used every bit of the hog he could.

Cooked properly it is a fine meal. Use potatoes to absorb the smell of the chitterlings while cooking.

The staple foods for Native Americans are the combination of corn or maize, beans and squash which were called 'The Three Sisters".

Most every meal contains at least one or all three of these foods.

Native people planted the three plants together such that the beans grew on the tall stalks of the corn, while the squash formed a ground cover to protect the plants from weeds.

They grew corn or maize, for hominy and dried it to make corn meal. Flour for bread was made from dried, ground acorns.

They had plantations and grew potatoes, pumpkins, beans, tomatoes, peppers, sassafras, muscadines, blackberries, raspberries, other wild berries and wild onions.

Other staple food are: Quinoa which is a variety of amaranth and sumpweed or marsh elder.

They also grew barley, maygrass, sunflower and foraged for mushrooms.

They harvested seafood, fish, oysters and salmon. And kept live stock like pigs.

They hunted wild game, boar, deer, duck, opossums, pheasant, quail, rabbit, raccoon, squirrels and buffalo.

These were all staple foods for the Western Native Cultures.

And all parts of the animal was used including chitterlings, which are fried large intestines of hogs, pork brain and eggs and livermush made from hog liver.

Six tribes – the Kaw, Osage, Otoe-Missouria, Pawnee, Ponca and Tonkawa – gather each year to celebrate their tribal heritage.

They sing, drum and compete in intricate and powerful dances, don colorful tribal regalia and share meals while catching up with each other.

This free event held in Ponca City the last Friday and Saturday of each September is open to the public and often considered one of the most significant American Indian events in the United States.

1. Be on time. The committee is doing everything possible to ensure that activities begin and run smoothly. Please cooperate in this regard.
2. Appropriate dress and behavior is required in the arena. Anyone unwilling to abide by this rule will be asked to leave by the Arena Director. (If you are going to dance, try to wear dance clothes.)

5. Respect the position of the Head Man and Head Woman Dancers. Their role entitles them to start each song or set of songs. Please wait until they have started to dance before you join in.

6. Dance as long and as hard as you can. When not dancing, be quiet and respect the arena
7. Be aware that someone standing behind you may not be able to see over you. Make room, step aside, sit, or kneel if someone is behind you.
8. Show respect to the flags and Honor Songs by standing during “special” songs.” Stand in place until the sponsors of the song have danced a complete circle and have come around you, and then join in. If you are not dancing, continue to stand quietly until the song is completed.
9. While dancing at any paw wow, honor the protocol of the sponsoring group.
10. Some songs require that you dance only if you are familiar with the routine or are eligible to participate. Trot dances, Snake, Buffalo, etc. require particular steps or routines. If you are not familiar with these dances, observe and learn. Watch the head dancers to learn the procedures. Based on a wonderful recipe from McCall's Cooking School, Meat #22. The intro says, "Lamb and beans the French way. To most Americans, accustomed to pork with their beans, lamb with white beans is an unusual combination. But it's an everyday meal to the French, particularly those from Brittany. The beans are cooked until tender, combined with garlic, onion, herbs and plum tomatoes, then cooked again for several hours with the lamb. We like our roast lamb fairly well done, while the French prefer it pink. A meat thermometer is a great help in roasting it to just the right degree."

This traditional Native American food made from dried meat pounded into a paste could be preserved for long periods of time in the form of pressed cakes. It was especially useful on long journeys or hunting expeditions. This Pemmican makes a great tasting snack like Granola does. Early Native Americans developed a companion planting method for their plantations to provide the most yield from their crops called the "Three Sisters".

The first sister is beans. Beans have vines that need tall poles to grow on and are planted next to the second sister, corn.

Corn lends it's tall straight stalks to the climbing vines and in return the beans roots bring nitrogen to the soil that corn needs to produce a large crop.
