I used chicken thighs because they have a lot of flavor and not much more fat than the breast if you remove the skin. I also use fresh salsa instead of jarred - tastes like summer all year!

dairy free alternative to a classic. My 2nd was born and about 2 weeks later we found out she was allergic to dairy and soy protein. I was breast feeding so I too had to remove all dairy and soy from my diet. I got so tired of making 2 meals - or multiple versions- for the whole family to enjoy. My husband and older daughter loved these and never even noticed the difference!
