I have never served this and not been asked for the recipe. It's so simple but absolutely delicious. Can also be made with white rice but fibre, calories and cooking time will need to be adjusted.

This is a quick, simple and versatile dish that can be served hot as a light main course or served chilled as a filling lunchtime salad. This is a great side dish to take to a potluck or picnic as it has no dairy and does not need to be kept cold!

In a medium saucepan cook mushrooms in hot olive oil till tender. Carefully add water to saucepan, Stir in parsley, basil, salt, oregano, and pepper. Bring to boiling; remove from heat. Stir in couscous and cover. Let stand, covered, for 5 minutes. Stir in chopped tomato and serve immediately.
Makes 4 servings.
