This is a great dish to take to a potluck or picnic. I always am glad when there is some leftover for my husband and I to have with dinner the next week.
This keeps very well for about a week in the refrigerator.

This can be used as a side dish or vegetarian meal just adjust the portion size to fit.
My family loves this as a side dish to a roast dinner. The top gets a crunchy cheesy brown crust that is absolutely delicious.
