I am always looking for ways to smuggle veggies into my kids and this one works, the flavour of the cheese and corn work well together. Made with Fat Free Buttermilk it is a lower fat version.These muffins are light and golden!

This recipe is very easy to make. Yorkshire pudding is a traditional, hollow, bread-like, giant muffin looking side that's not pudding at all. A wonderful addition to any meal. Serve on Thanksgiving, Christmas or any occasion.

These are so good. I recommend always making a double batch so that everyone can have at least two. Serve with gravy, butter, honey, or my favorite - just plain.
