I have combined a few recipes I like, trying to find a vegan breakfast muffin. This one turned out to be too high in calories - but it does make a pretty big muffin. Very yummy & filling.

Similar to my Bananas Foster recipe except this one is RICHER! It can be served with any of the things I mention in that one. (Over Cottage Cheese Cake, with cinnamon tortilla chips, w/ a waffle or pancakes. It can also go in oatmeal.

Very tasty Asian flavor. Cooks very quickly, so prepare ingredients before cooking. We serve it with jasmine rice and a small garden salad. Five Spice Powder is a Chinese spice, and can usually be found in the ethnic foods section.
