This is a favorite recipe from a friends Mother. Only I tweaked it a little bit, so that it's less calories/fat etc. A great way to use up those zucchinis from the garden! This is a crowd pleaser!

This is sooo yummy and very healthy and low cal AND low sodium. Serve on corn tortillas, OR it makes a great burrito filling OR just eat it all by itself topped with sour cream and low fat cheese.
