These are low carb, low calorie breakfast muffins that I just love! You can do a meatless version with morningstar farms veggie sausage patties diced and added in place of ham.

This is a favorite at my houe...a little high in calories, but you can make alterations to fix that. This is great with Basmati rice or Brown rice...
