A dutch baby is a breakfast dish similar to Yorkshire pudding. It is baked in a metal pan and falls soon after being removed from the oven. They are usually served with powdered sugar and fresh squeezes lemon juice.

First, in a skillet, I put 1 tsp soft margarine, 1 tsp olive oil + some olive oil spray, a few leaves of fresh rosemary, and some dried basil. I then chopped the potato, tomato, onion and green pepper and began to saute them just until softer (not until brown).

Once they were sufficiently sauteed where onion is translucent and potatoes were softer (but not brown), I then put them into a baking dish and tossed with the rest of the olive oil - popped them into the oven for about 20 min or until brown/crisp.

Can sprinkle a little grated parmesan over them or serve with salsa for added punch. Makes a great breakfast when you have a little more time.
