This is an easy and delicious one pot meal. The number of servings seems rather weird, but that is how many 2 cup servings we got. I see that the sodium value is pretty high. There is no way to note it when entering nutrition information, but you rinse the chickpeas which lowers the sodium considerably. Of course you can also reduce the amount of salt you add to lower it even further! If you have left over butternut squash that is already cooked it cuts down the recipe time to less than 30 minutes, just skip the first step and proceed with recipe. Enjoy!

This is a bit higher fat and calorie, if you make it into 6 servings. If you divide it into 8 servings, the calories per serving go down to 400. It's very filling! This is a good vegetarian source for NON-saturated fats, fiber and protein.

I had to work around the measurements SparkPeople had in the food area, so here are some notes:

- GREEN BEANS - I used 1 lb of frozen green beans
- CHICKPEAS - this is 2 14.5 oz cans
- SWEET POTATOES - this is 2.25 lbs
- PEANUT BUTTER - this is 1/2 cup

This is an amazing stew with a variety of flavors. Don't the let the coconut oil throw you, it adds a fantastic flavor. We don't even like coconut in our house!

I know there are already several recipes with this name, however, this version is vegan friendly and is okay to use on the Daniel Fast. Very tasty - something different
