Cookbook creator says: Made this last night, it was absolutely delicious. Even my DH said to make it soon again. Since I’m cooking for 2, I cut the recipe way in 4th’s, but forgot to cut back the Wine, so had to reduce the liquid a bit longer, but it didn’t appear or taste like it hurt a thing. Very tasty and quick.

Yo u may add or subtract ingredients to your taste.
Serve with a crusty roll for a great dinner.
Soup doubles and freezes well.
I freeze bits of vegetables and then add them to the soup as well.
