This is another recipe that started out from the Eat Up Slim Down book. I had some broccoli from my garden and it tasted awesome. I left out the milk and flour base and just used the evaporated skimmed milk and it was delicious. I used to make broccoli cheese soup with cream and cheese, but this tastes so good I probably won't go back. My kids love it, too. It's great with a grilled cheese and tomato sandwich. I LOVE chicken & dumplings so when I found this I added my own spin to it and lowered the fat and calories. This is the best chicken and dumplings I've ever had which is amazing since I'm never satisfied with my cooking! You can have a full cup of this hearty comfort food for only 284 calories and 3.8 grams of fat! The sodium could be reduced if homemade biscuits are used instead of the canned biscuits, but if sodium isn't a problem this is a very fast and easy way to make chicken & dumplings! I made Crock Pot Recipe this morning so it was all ready when I got home for dinner tonight and it is just too good to keep to myself! It felt like it was made by a real chef. Mmm. I served this with wheat pasta and broccoli and drizzled the sauce over that with the chicken on top. There was a lot of left over sauce, so I'm not sure how to account for it nutritionally, but most of the fat/calories weren't eaten with the chicken. I bet you could even take out/reduce the olive oil in the recipe, but it's a healthy amount, so Ieft it in. Any kind of chicken can be used, but I went with the low fat chicken breast.
