This was a recent recipe in Taste of Homes "Healthy Cooking" that I revamped to make even lighter and healthier. I substituted ground turkey for the beef and used fat free sour cream and cheese instead of reduced fat, which cut 90 calories from their light version. The results were fabulous and a hit with my whole family. Proof that low fat can taste good!

Cheap and EASY to make for lunch or dinner! Serve with Fat-Free or low-fat Pringles, some cucumber slices or carrots and you have a complete meal! I used thin sliced roasted-garlic Artisian bread, but this recipe calls for doing one large sandwich on French bread loaf and then slicing into individual portions.

Cookbook creator says: *put in the crock pot for 6 hours instead; veggies on bottom, meat on top and reduced water.
*also cut the meat into 3 oz. serving size pieces instead of bite size pieces and lightly floured it before browning.
*serve with rice
