I am a stay at home mom with three children. Two of them and my husband have different food allergies and intolerances. This can make cooking a challenge. I love to do experimental cooking and incorporate extra protein like beans in because my oldest doesn't like meat. I hope you enjoy this deliciously dark chocolate cake as much as we do.

Great for those who can't have soy or dairy! If you don't have cravings for sweets, then you can probably decrease or omit the brown sugar. Low cost and you can eat the whole pan of muffins without breaking your diet!

I needed to make a soup that was not only vegan but that did not include soy so that my 8 year old, who is allergic to soy, could eat it. I had no other vegan "milks" or "cheeses" on hand with which to adapt a traditional recipe so I had to start from scratch. This is my attempt to make a flavorful potato soup that contains no dairy analogs and is both vegan and soy free. Hope you like it as much as we do!

Mix wet ingredients together in bowl, mix dry ingredients together in separate bowl, then slowly mix wet ingredients with dry. Grease bread pan well. 325 degrees for 35-40 minutes
