Cookbook creator says: cooked in Pamper Chef ceramic baker; 325 degrees for 3 hours (4 lb roast). Used same quantities of ingredients as was listed for the 2 lb roast (no increases). Also added onion and carrots to the pot. 3/21/2012

NOTE: soy milk works instead of egg for the moisture. Dry the fish completely before flouring. Have trouble with coating coming off when the fish is flipped.

This was served every year at my house on New Years Day. It's that special treat I look forward to every year. It has been passed through our family starting with my Great grandmother and each person adds a little something to it. My addition was the garlic.

I'm always looking for a way to make burgers so I put this together and my husband asks for it all the time now!

You can adjust the veggies to your taste and use a leaner turkey to reduce the calories. I like the 85/15 to keep it moist though.

This is my version of a fairly low-cal meatloaf.

NOTE: You basically just need 2 pounds of meat total. I had to put 19.33 to get the calories to match the turkey breast I had on hand (too lazy to input the info myself).
