I love rich, cheesy lasagna, but in the summer when vegetables are at their peak, cheese overwhelms the dish. Adding plenty of fresh vegetables to your regular lasagna for a healthy, light summer supper.

This recipe has been healthy-fied from an older version that I've had for years. I've thrown the old less healthy version out the door!! WooHoo!

The wheat germ absorbes moisture so the sauce won't run right out when cutting. It also provides fiber. If you do not have wheat germ handy just replace it with one large egg.

Also, use whatever veggies you have on hand! This recipe will also be great with eggplant, zucchini, carrots, etc.

Enjoy! *Also freezes great (think convenience!)

A departure from standard pasta with tomato sauce- Neufchatel Cheese is used in place of cream cheese and the nutmeg and crushed red pepper flakes give it a unique flavor! A great new way to "eat your spinach"!
Ziti or Penne pasta can be used.

This is a lasagna made with Eggplant, instead of traditional pasta noodles. This is really a great tasting dish. This has been confirmed by the kids who will eat it, without knowing they are eating eggplant. I was once told that if the kids eat it, it must be pretty good. I hope you try it.

Roasted Vegetable Lasagna

A delicious and healthy lasagna. Roasting the vegetables before putting the lasagna together brings out their flavor and gives an added depth to the dish.

Using a mandolin slicer to slice the vegetables makes them the perfect thickness to use as the lasagna "noodles".
