Quick-n-Easy Raw Veggie Salad

For all you Raw Foodies or just curious, here's a great summer salad - all raw - using the bounty of the season. Wash and tear lettuce and spinach into a large bowl. Slice the kernals off of half of an uncooked cob of sweet corn. Slice sweet peppers. Separate the rings of the onion and toss all into the salad bowl with the lettuce and spinach. Slice the avocado and set aside. Half each of the cherry or grape tomatoes and set aside. Portion the salad into 4 bowls. Top with Avocado slices and ring each bowl with tomato halves. This salad is so creamy with the avocado and sweet from the corn and peppers that I don't use any additional dressing. You might want to squeeze a lemon or lime over the top.

Variation: You could always toss in a few Pine Nuts and Raisins. That's always nice. But I like it best just the way it is above. Enjoy!Submitted by HEALTHYBIZ
