As an alternative to sugar packed crust, sweet and tender pears encase a fruit and nut filling that's similar to cheesecake.

Time savers:
Up to 3 days before, prepare cheesecake mixture, but don't add the almonds.
Day before, poach pears and make sauce. Refrigerate overnight. Stuff pears and keep in the fridge for up to 6 hours. Bring pears and sauce to room temp before serving.

These are very fancy, and replace your usual Thanksgiving pie quite nicely.

Great as a dessert with a scoop of vanilla low fat ice cream or as is.
Tastes like apple pie without the calories of the crust.
You can just use the apples if you don't like pear and if you want a little tartness add some crasins
You can use less splenda brown sugar, I really don't measure it I just sprinkle it on top (so I really think I use less than 1/4 cup)

Low fat, low cal, high flavor & texture!

These are very chewy, kind of like soft granola bars, which to me is rather satisfying. They don't spread out much, so if you like your cookies flatter instead of plump, you'll want to press them down with your spoon or a spatula.

These are DELICIOUS!!!! They are large, and the big raisins really deliver a sweet burst when you bite into them. You could also use all black raisins for a traditional oatmeal raisin cookie, but I had these raisins in the cabinet and decided to give it a try. The colors in the raisins make them more attractive. Also, you could probably reduce the Splenda by ½ only using ¼ cup because these cookies are very sweet! They are chewy and delicious! As you can see from the picture - they make rather big cookies!
