This is a delicious vegan alternative to pulled pork, found on http://chowvegan.com/2008/05/28/bbq-pulled-jackfruit-sandwich/. Canned young green jackfruit in brine is unripe, and what you want for this recipe. It’s prepared as a vegetable and is also known as “vegetable meat”. Don't get the ripe kind!

This also needs time to sit and marinate after cooking, so make it a day ahead of time. You will not like the flavour after immediate cooking.

A super tasty vegan alternative to chicken, egg or tuna salad. There are endless combinations to this salad. I like to serve it in pitas or tortillas with spinach and peppers, but you can alter this recipe to suit your needs. I used vegenaise, but you can use any other suitable mayo substitute such as nayonaise or even a non-vegan mayo.

Pseudo-Sophisticated French Lentil Soup

I call this soup pseudo-sophisticated because of how gourmet it tastes, even though it is one of the easiest things to make! I got this recipe off of www.vegweb.com and I absolutely love it. I have made some modifications but its basically the same. This soup has AMAZING fiber and protein values.
