Kimi Anne's Diabetic Cookbook

My 6 year old son has type 1 diabetes and I have type 2 so we wanted meal ideas that were lower carb and tasty for the whole family to enjoy(45-60g). I refuse to make separate meals. :) Also we use splenda where sugar is listed.

Cookbook creator says: We usually add mashed baby red 'taters to this or do an instant version but keep it at 1/2 cup serving. A lso good with flavored green beans or a steamed veggie of some kind. Sugar Free Jello is a fun addition too!

Cookbook creator says: We are able to get carne asada meat at our grocery store. These grill quickly! We used the meat as a base and layered the avacado, onions, salsa and ff sour cream on top and MAN was it good. Another one where the green taco sauce is great on top.

Cookbook creator says: flints favorite!!!! Add more chili's for more of a kick. Josh isn't into spicy so I make it mild then the adults add spicy stuff afterwards. If you're feeling frisky add olives to it too!

Cookbook creator says: They were moist (don't over grill). I added an egg white and a wee bit of bread crumbs to help it stay together. I also used FF feta. Make sure you "Pam" the grill so they don't stick. Loved em! Keeper!!! Serve with grilled onions... I also use ground turkey instead of chicken
